Recipe Title: Strawberry Delight

Ingredients:

  • 1 box of Angel Food Cake Mix
  • 1 large tub of Cool Whip (16 oz) – I used Lite
  • 1 jar of strawberry preserves (18 oz)
  • 1 large container of fresh strawberries, cut in half
  • 1 tablespoon sugar (for strawberries)

Directions:

  1. Prepare the Cake: Follow the instructions on the Angel Food cake mix box to prepare the cake batter. Bake in two round cake pans as directed. Once baked, allow the cakes to cool completely.
  2. Prepare the Strawberry Mixture: In a large bowl, mix the halved fresh strawberries with 1 tablespoon of sugar. Set aside to allow the strawberries to macerate.
  3. Make the Strawberry Cool Whip Filling: In a separate bowl, mix half of the Cool Whip with the jar of strawberry preserves until well combined.
  4. Slice the Cake Layers: Once the cakes are fully cooled, carefully slice each round cake in half horizontally, creating four layers total.
  5. Assemble the Cake: Place one of the bottom cake layers on a serving dish. Spread a portion of the Cool Whip and strawberry preserve mixture over the cake layer and top with a few fresh strawberries. Repeat this process for each layer of cake.
  6. Frost the Cake: Once all the layers are assembled, use the remaining Cool Whip to frost the entire cake, covering it completely.
  7. Decorate and Chill: Decorate the top of the cake with the remaining fresh strawberries. Place the cake in the fridge for a few hours to chill before serving.
