Rotel Tacos Recipe

Ingredients:

  • 1 lb ground beef (preferably 97/3 lean ratio)
  • 1 tablespoon taco seasoning
  • 1 can (10 ounces) Ro*Tel® tomatoes, with juices
  • 8 ounces Velveeta cheese (½ block)
  • 10 nacho cheese taco shells
  • 2 cups romaine lettuce, chopped
  • 3 tablespoons sour cream
  • Fresh cilantro, for garnish

Instructions:

  1. Cook the Beef:
  • Heat a skillet over medium heat. Add the ground beef and taco seasoning. Cook until the beef is thoroughly browned, breaking it into small pieces as it cooks. If you prefer, you can drain some of the fat, although it may not be necessary if using lean beef.
  1. Melt the Cheese:
  • In a saucepan over medium heat, combine the Velveeta and Ro*Tel® tomatoes with their juices. Stir occasionally and cook until the cheese has completely melted, about 10 minutes.
  1. Assemble the Tacos:
  • Start with a layer of chopped romaine lettuce in each taco shell. Add a couple of spoonfuls of the seasoned beef. Pour over the melted Velveeta and tomato sauce.
  • Top each taco with a dollop of sour cream and a sprinkle of fresh cilantro. Feel free to add any other favorite toppings.

Notes:

  • If using beef with a higher fat content, consider draining some of the fat after cooking to keep the tacos less greasy.
  • Customize your tacos with additional toppings like diced onions, jalapeños, or a squeeze of lime to tailor them to your taste.

Enjoy these Rotel Tacos as a zesty and satisfying meal that brings everyone around the table with smiles!
