Pioneer Woman’s Spaghetti Sauce

- 2 large yellow onions, diced
- 2 green bell peppers, seeded and diced
- 6 cloves garlic, minced
- 1 cup white wine (or low sodium beef broth as an alternative)
- 2 (28 ounce) cans crushed tomatoes
- 1 (14 ounce) can crushed tomatoes
- 1 (4 ounce) can tomato paste
- 1 jar Trader Joe’s marinara sauce
- 1 teaspoon ground oregano
- 1 teaspoon ground thyme
- 4 whole bay leaves
- 2 tablespoons sugar
- 2 teaspoons kosher salt
- ½ teaspoon crushed red pepper (optional)
- ¼ cup finely minced fresh parsley (or 3 tablespoons parsley flakes)
- 1 rind from a wedge of Parmesan (optional)
- ½ cup grated Parmesan cheese (optional)
- A pinch of cinnamon (optional)
- 2 pounds spaghetti, cooked al dente and tossed with olive oil
- Extra minced parsley, for serving
- Extra Parmesan cheese, for serving
Directions:
- In a large pot over medium-high heat, brown the ground beef until fully cooked and browned. Remove the beef with a slotted spoon and set aside in a bowl. Discard any excess grease from the pot, but do not clean it.
- Add olive oil to the pot and heat. Once hot, add the diced onions and bell peppers. Cook for about 1.5 minutes, then add the minced garlic and cook for an additional minute.
- Pour in the white wine or beef broth, letting it bubble and reduce for about 1.5 minutes.
- Stir in the crushed tomatoes, tomato paste, and marinara sauce. Add the oregano, thyme, bay leaves, sugar, salt, and crushed red pepper if using. Mix well.
- Return the browned ground beef to the pot, stirring to combine everything.
- Cover the pot and let the sauce simmer for 1 hour, stirring occasionally. Add a bit of water or broth if the sauce appears too thick.
