  • 16 oz cottage cheese
  • 1/2 cup sour cream
  • 2 eggs
  • 1 1/2 cups freshly grated Parmesan cheese, divided
  • 2 cups mozzarella cheese, chopped into 1/4-inch cubes, divided
  • Kosher salt and freshly ground black pepper, to taste

Instructions:

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with nonstick spray.
  2. In a large pot of salted boiling water, cook the ziti until it is al dente, about 2 minutes less than the package instructions. Drain and lightly drizzle with olive oil to prevent sticking. Set aside.
