2 tablespoons Pesto sauce
2 tablespoons Olive oil
4 large Chicken breast (chopped)
1 clove Garlic (chopped)
1 Lemon (Juice, Zest)
200 grams Fresh mushrooms (sliced)
1 cup Cream
1 tablespoon Parmesan cheese (grated)
300 grams Penne pasta (cooked)
Fresh basil (for garnish)
Heat the oil in a large heavy-based pan.
Brown the chicken pieces, mushroom, and garlic for about 5 minutes or until the chicken is cooked through.
Stir through the pesto, lemon juice, lemon zest, cream.
Bring to the boil, reduce heat and simmer for 5 minutes.
Serve with penne, grated parmesan, and basil
