- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 3 teaspoons ground cinnamon
- 3 eggs
- 1 cup vegetable oil
- 2 1/4 cups white sugar
- 3 teaspoons vanilla extract
- 2 cups grated zucchini
- 1 cup chopped walnuts (optional)
Instructions
- Preheat and Prepare: Heat your oven to 325°F (165°C). Grease and flour two 8×4 inch loaf pans.
- Combine Dry Ingredients: In a bowl, sift together the flour, salt, baking soda, baking powder, and cinnamon. Set aside.
- Mix Wet Ingredients: In a large bowl, beat the eggs, oil, vanilla, and sugar together until smooth.
- Combine Mixtures: Gradually add the dry ingredients to the wet mixture, beating until well incorporated.
- Add Zucchini and Nuts: Stir in the grated zucchini and walnuts, if using, until evenly mixed.
- Bake the Bread: Pour the batter into the prepared pans. Bake for 40 to 60 minutes, or until a tester inserted in the center comes out clean.
- Cool and Serve: Allow to cool in the pans on a rack for 20 minutes. Remove the bread from the pans, and let cool completely. Serve sliced.
