  • 1 teaspoon salt
  • 1 teaspoon baking soda

  • 3 teaspoons ground cinnamon
  • 3 eggs
  • 1 cup vegetable oil
  • 2 1/4 cups white sugar
  • 3 teaspoons vanilla extract
  • 2 cups grated zucchini
  • 1 cup chopped walnuts (optional)

Instructions

  1. Preheat and Prepare: Heat your oven to 325°F (165°C). Grease and flour two 8×4 inch loaf pans.
  2. Combine Dry Ingredients: In a bowl, sift together the flour, salt, baking soda, baking powder, and cinnamon. Set aside.
  3. Mix Wet Ingredients: In a large bowl, beat the eggs, oil, vanilla, and sugar together until smooth.
  4. Combine Mixtures: Gradually add the dry ingredients to the wet mixture, beating until well incorporated.
  5. Add Zucchini and Nuts: Stir in the grated zucchini and walnuts, if using, until evenly mixed.
  6. Bake the Bread: Pour the batter into the prepared pans. Bake for 40 to 60 minutes, or until a tester inserted in the center comes out clean.
  7. Cool and Serve: Allow to cool in the pans on a rack for 20 minutes. Remove the bread from the pans, and let cool completely. Serve sliced.
