For the crust:
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
For the filling:
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 eggs
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 1/2 cup cocoa powder
- 1 cup semi-sweet chocolate chips, melted
For the ganache:
- 1/2 cup heavy cream
- 1 cup dark chocolate chips
Instructions
- Prepare the Crust: Combine chocolate cookie crumbs and melted butter, press into the bottom of a springform pan, and set aside.
- Make the Filling: In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, followed by sour cream, vanilla, and cocoa powder. Fold in melted chocolate chips and pour over the crust.
- Bake: Cook in a preheated oven at 325°F for 50-55 minutes. The center should be set but slightly wobbly. Cool on a rack, then refrigerate for 4 hours.
- Prepare Ganache: Heat heavy cream, pour over dark chocolate chips, wait a minute, then stir until smooth. Pour over chilled cheesecake.
- Chill Again: Return the cheesecake to the fridge for at least an hour to set the ganache.
