- 3 ripe bananas, mashed
- 2 teaspoons lemon juice
- 3 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 2 1/8 cups granulated sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups buttermilk
- 1/2 cup chopped walnuts (optional)
Instructions
- Prepare Your Pan: Preheat your oven to 275°F (135°C). Grease and flour a 9×13 inch baking pan.
- Banana Mixture: Mix mashed bananas with lemon juice and set aside. In a medium bowl, mix flour, baking soda, and salt; set aside.
- Cream Butter and Sugar: In a large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla.
- Combine Ingredients: Alternately beat in the flour mixture and the buttermilk, starting and ending with the flour mixture. Stir in the banana mixture.
- Bake: Pour the batter into the prepared pan. Bake for about 70 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Let the cake cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
