- 1 pound ground beef
- 1 medium onion, chopped
- 1 can (15 oz) red enchilada sauce
- 1 can (4 oz) diced green chilies
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 8 flour tortillas
- 2 cups shredded Mexican cheese blend
- 1/4 cup chopped fresh cilantro
- Sour cream, for serving
Instructions
- Preheat Oven: Set your oven to 350°F.
- Cook Beef and Onions: In a skillet over medium heat, cook the ground beef and onion until the meat is browned and the onions are soft. Drain any excess fat.
- Add Flavors: Mix in half the enchilada sauce, green chilies, chili powder, cumin, salt, and pepper. Simmer for 5 minutes until slightly thickened.
- Prepare Baking Dish: Lightly coat the bottom of a 9×13 inch dish with some of the remaining enchilada sauce.
- Assemble Enchiladas: Spoon the beef mixture onto each tortilla, add cheese, roll up, and place seam side down in the dish.
- Top and Bake: Cover the enchiladas with the rest of the sauce and sprinkle with remaining cheese. Bake for 20 minutes until hot and bubbly.
- Garnish and Serve: Sprinkle with cilantro and serve hot with sour cream on the side.
