Tex-Mex Beef Enchiladas

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 can (15 oz) red enchilada sauce
  • 1 can (4 oz) diced green chilies
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 8 flour tortillas
  • 2 cups shredded Mexican cheese blend
  • 1/4 cup chopped fresh cilantro
  • Sour cream, for serving

Instructions

 

  1. Preheat Oven: Set your oven to 350°F.
  2. Cook Beef and Onions: In a skillet over medium heat, cook the ground beef and onion until the meat is browned and the onions are soft. Drain any excess fat.
  3. Add Flavors: Mix in half the enchilada sauce, green chilies, chili powder, cumin, salt, and pepper. Simmer for 5 minutes until slightly thickened.
  4. Prepare Baking Dish: Lightly coat the bottom of a 9×13 inch dish with some of the remaining enchilada sauce.
  5. Assemble Enchiladas: Spoon the beef mixture onto each tortilla, add cheese, roll up, and place seam side down in the dish.
  6. Top and Bake: Cover the enchiladas with the rest of the sauce and sprinkle with remaining cheese. Bake for 20 minutes until hot and bubbly.
  7. Garnish and Serve: Sprinkle with cilantro and serve hot with sour cream on the side.
