  • 180 g / 6 oz sliced large salami (Note 1)
  • 1/4 cup baby capers, drained
  • 2 tablespoons finely chopped parsley or basil (or other herb of choice, or omit)
  • Crackers, to serve (I use Jatz)

Directions:

  1. Prepare the Cream Cheese:
    • Place the cold block of cream cheese on a large piece of cling wrap. Cover it with another piece of cling wrap. Using a rolling pin, roll the cream cheese into a rectangle about 32 cm (13 inches) long and 23 cm (9 inches) wide. (Note 2)
  2. Add the Salami:
    • Peel off the top layer of cling wrap and cover the cream cheese rectangle with overlapping slices of salami, making sure to cover the entire surface.
  3. Assemble the Roll:
    • Cover the salami layer with a fresh piece of cling wrap, press down lightly, then flip the entire sheet so the cream cheese side is facing up.
    • Peel off the cling wrap to expose the cream cheese.
    • Sprinkle the capers and chopped parsley (or basil) evenly over the cream cheese.
  4. Roll it Up:
    • Starting from the long edge, carefully roll the cream cheese and salami, removing the cling wrap as you roll. Roll firmly to avoid any air bubbles.
    • Once fully rolled, wrap the roll in the same cling wrap, twist the ends, and refrigerate for at least 4 hours to firm up.
  5. Serve:
    • When ready to serve, unwrap the roll from the cling wrap and slice it into rounds.
    • Serve with crackers, such as Jatz or any favorite brand.
