  • 1/2 cup fresh flat-leaf parsley, chopped
  • 2/3 cup grated Parmesan cheese
  • 1/3 cup Italian bread crumbs
  • 1 large egg
  • 2 tablespoons + 1/3 cup marinara sauce (such as Victoria’s)
  • 3 garlic cloves, minced
  • 1 pinch of crushed red pepper flakes
  • Salt and pepper to taste
  • 1 package of ground beef (1.5-2 lbs)
  • 16 cubes of smoked mozzarella cheese (1/2 inch each)

Directions:

  1. Position the oven rack in the lower third of the oven and preheat to 400 degrees F.
  2. In a large bowl, combine the grated onion, chopped parsley, Parmesan cheese, bread crumbs, egg, 2 tablespoons of marinara sauce, minced garlic, red pepper flakes, salt, and pepper.
  3. Add the ground beef to the bowl and mix thoroughly with your hands.
