Mini Peach Upside Down Cakes

  • 1/4 cup butter, melted
  • 1/2 cup brown sugar, packed
  • 2 cans (15 oz each) peach slices, drained
  • 1 box yellow cake mix
  • 3 eggs
  • 1/3 cup vegetable oil
  • 1/3 cup water

Instructions

 

  1. Preheat and Prepare Pans: Set your oven to 350°F (175°C). Grease a 12-cup muffin tin.
  2. Mix Butter and Sugar: In a small bowl, mix the melted butter and brown sugar. Spoon 1 teaspoon into each muffin cup.
  3. Arrange Peaches: Place 2-3 peach slices in a circular pattern over the sugar mixture in each cup.
  4. Prepare Cake Batter: Mix the cake batter with the eggs, oil, and water according to the package directions.
  5. Fill Cups: Pour the batter over the peaches, filling each cup about 3/4 full.
  6. Bake: Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  7. Cool and Invert: Allow to cool in the pan for 5 minutes, then run a knife around the edges of each cake and invert onto a cooling rack.
