A Hearty, Flavorful Comfort in a Bowl
Meatball Soup is the perfect way to enjoy the richness of homemade meatballs while also packing in nutritious vegetables. The broth is infused with the flavors of beef, tomatoes, and herbs, making it a wholesome and delicious meal that’s easy to prepare. Let’s get started on this comforting, satisfying soup!
Ingredients:
- 1 lb ground beef
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 stalks celery, sliced
- 1 (28 oz) can diced tomatoes
- 4 cups beef broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
Directions:
- In a medium bowl, combine the ground beef, breadcrumbs, grated Parmesan, egg, minced garlic, salt, and pepper. Mix until all ingredients are well incorporated, then form the mixture into small meatballs.
- Heat the olive oil in a large pot over medium heat. Once hot, add the meatballs in batches, cooking until browned on all sides. Remove the meatballs from the pot and set aside.
- In the same pot, add the chopped onion, sliced carrots, and sliced celery. Sauté the vegetables until they are softened, about 5 minutes.
- Add the diced tomatoes (with their juices), beef broth, dried basil, and dried oregano to the pot. Stir to combine and bring the mixture to a boil.
- Return the browned meatballs to the pot, reduce the heat to a simmer, and let the soup cook for about 30 minutes. This allows the flavors to meld together and the meatballs to cook through completely.
- Serve the soup hot, garnished with additional Parmesan cheese if desired.
