- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup lemon curd
- Powdered sugar for dusting
Instructions
- Prepare Dough: Cream together butter and sugar until light and fluffy. Gradually add flour and salt, mixing until a soft dough forms.
- Shape Cookies: Roll the dough into 1-inch balls and place on a lined baking sheet. Press down the center of each ball with your thumb to make an indentation.
- Fill with Lemon Curd: Spoon a small amount of lemon curd into each indentation.
- Bake: Cook in a preheated oven at 350°F for 12-15 minutes or until the edges are lightly golden.
- Cool and Dust: Let cool on the sheet for a few minutes before transferring to a wire rack. Dust with powdered sugar before serving.
