Preparation Time: 45 minutes (includes resting)
Cooking Time: 30 minutes
Servings: 20 tortillas
Ingredients:
- 4 cups (600g) all-purpose flour
- 1 ¾ tsp (10.5g) salt
- 1 ½ tsp (6g) baking powder
- 8 tbsp (113.4g) butter, softened or melted
- 1 â…“ cup (316ml) warm water
Instructions:
- Mix Dry Ingredients:
- In the bowl of a standing mixer fitted with a dough hook, combine the flour, salt, and baking powder. Stir these together to ensure even distribution.
- Add Butter and Water:
- Add the softened or melted butter to the flour mixture. Pour in the warm water gradually while the mixer is running at medium-low speed.
- Knead the Dough:
- Let the mixer knead the dough for about 5 minutes. The dough should be soft and smooth, clearing the sides of the bowl but slightly sticky at the bottom. Adjust with a little more flour or water if necessary to achieve the right consistency.
- Rest the Dough:
- Turn the dough out onto a clean work surface. Divide it into 20 equal balls. Cover these with plastic wrap and let them rest on the counter for at least 30 minutes, or up to 2 hours.
- Roll Out Tortillas:
- Heat a large non-stick skillet or seasoned cast iron pan over high heat. The pan is ready when a drop of water sizzles and evaporates almost immediately.
- Take one dough ball at a time, keeping the others covered. Roll it into a 6-inch disk using a rolling pin. Further stretch and shape the tortilla with your hands to thin it out as needed. Lightly flour the surface if the dough sticks.
- Cook the Tortillas:
- Place the rolled tortilla in the center of the hot pan. Cook for about 20 seconds, or until brown spots form on the underside. Flip with a spatula and cook the other side for another 10-20 seconds until it has similar brown spots.
- Remove the cooked tortilla and place it on a wire rack to cool. Repeat with the remaining dough balls.
- Serve or Store:
- Serve the tortillas warm, or allow them to cool completely before storing in an airtight container. They can be reheated in a microwave or back on the skillet for a few seconds on each side.
