- 1 (8 oz) package cream cheese, softened
- 1/2 cup unsalted butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 1 (18.25 oz) package vanilla cake mix
- 1/4 cup confectioners’ sugar for dusting
Instructions
- Preheat and Prepare: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix Butter and Cheese: In a large bowl, beat the cream cheese and butter until creamy and smooth.
- Add Egg and Vanilla: Mix in the egg and vanilla extract until fully incorporated.
- Incorporate Cake Mix: Gradually blend in the cake mix on low speed until the dough comes together.
- Chill the Dough: Refrigerate the dough for about 30 minutes to firm up.
- Form Cookies: Roll the dough into 1-inch balls, then roll each ball in confectioners’ sugar to coat.
- Bake: Place the sugared balls on the baking sheet, spaced about 2 inches apart. Bake for 10-12 minutes just until set but still soft.
- Cool: Allow the cookies to cool on the sheet for a few minutes, then transfer to a wire rack to cool completely.
