For the Filling:
- 2 cups finely chopped peeled apples or peaches
- 1/4 cup sugar
- 1/2 teaspoon ground cinnamon (for apples) or nutmeg (for peaches)
- 1 tablespoon butter
- 1 teaspoon lemon juice
For the Dough:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 2/3 cup shortening
- 4–5 tablespoons cold water
For Frying:
- Vegetable oil for frying
Instructions
- Prepare the Filling: In a saucepan over medium heat, combine the chopped fruit, sugar, cinnamon or nutmeg, and lemon juice. Cook until the fruit is soft and the mixture has thickened, about 5-7 minutes. Remove from heat, stir in the butter, and let cool.
- Make the Dough: In a bowl, mix flour and salt. Cut in shortening until the mixture resembles coarse crumbs. Gradually add cold water, tossing with a fork, until a dough forms.
- Roll and Cut Dough: On a floured surface, roll out the dough to 1/8-inch thickness. Cut into 6-inch rounds.
- Assemble the Pies: Spoon about 2 tablespoons of filling onto one half of each dough round. Fold the dough over the filling and press the edges with a fork to seal.
- Fry the Pies: Heat oil in a deep skillet or deep fryer to 375°F. Fry the pies until golden brown, about 2-3 minutes per side. Drain on paper towels.
