1 egg
1 cup milk
1 tablespoon Vegetable oil
1 cup Flour
1/2 teaspoon Salt
1 1/2 tablespoon baking powder
3 tablespoons Sugar
1 teaspoon Cinnamon
Directions
Combine all ingredients in a medium bowl and stir with a whisk until the batter is smooth. Heat non-stick pan to medium heat.
Cook 1st side until bubbles form on top and they start popping, flip and cook until both sides are light brown. Let cool slightly on a cookie cooling rack…this way they don’t get soggy.
