Ingredients:
- Parchment paper for lining
- 1 cup butter
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 3 cups oats
- 1/2 teaspoon cinnamon
- 1/2 teaspoon kosher salt
- 1 1/2 cups chocolate chips
- 3/4 cup peanut butter
Directions:
- Prepare the Baking Dish:
Line an 8-inch by 8-inch baking dish with parchment paper, leaving some overhang on the sides for easy removal, and set it aside. - Cook the Oat Mixture:
In a medium saucepan, combine the butter, brown sugar, and vanilla extract. Heat over low heat until the butter has melted and the sugar has dissolved. Add the oats, cinnamon, and kosher salt, and cook while stirring constantly for 4 to 5 minutes until the mixture is well combined and slightly toasted. - Form the First Layer:
Pour half of the oat mixture into the prepared baking dish. Spread the mixture evenly, pressing down firmly to form a solid base. - Prepare the Chocolate Layer:
In a small microwave-safe bowl, combine the chocolate chips and peanut butter. Microwave on high in 40-second increments, stirring in between each, until the mixture is melted and smooth. - Assemble the Bars:
Pour about ⅘ of the chocolate mixture over the pressed oat layer in the baking dish, reserving about ¼ cup for the final drizzle. Carefully spread the chocolate to cover the oats. Top with the remaining oat mixture, pressing down lightly. Drizzle with the reserved chocolate mixture. - Chill the Bars:
Refrigerate the dish for at least 4 hours, or until the chocolate is set and the bars are firm. - Serve:
Once set, lift the bars out of the dish using the overhanging parchment paper and cut them into squares. If you’ve frozen them, let them thaw to room temperature before serving for the best texture.
