  • 1 package refrigerated pie crusts (use 1 crust)
  • 1 cup brown sugar
  • 1 cup light corn syrup
  • 1/2 cup butter
  • 4 eggs, lightly beaten
  • 1 1/2 cups chopped pecans
  • 1 teaspoon vanilla extract

Instructions

 

  1. Prepare the Crust: Preheat the oven to 350°F (175°C). Unroll the pie crust and press it into the bottom and up the sides of a 9×13-inch baking pan.
  2. Make the Filling: In a medium saucepan, combine brown sugar, corn syrup, and butter. Bring to a boil over medium heat, stirring constantly. Remove from heat and let cool slightly.
  3. Mix in Remaining Ingredients: Stir in the beaten eggs, chopped pecans, and vanilla extract until fully combined.
  4. Assemble and Bake: Pour the pecan mixture evenly over the prepared pie crust. Bake for 45-50 minutes, or until the filling is set and the crust is golden.
