  • 2 pounds chicken breasts, boneless and skinless
  • 1 (20 oz) can pineapple chunks, with juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/2 cup chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Fresh cilantro, chopped for garnish

Instructions

  1. Prepare the Chicken: Place the chicken breasts at the bottom of the crockpot.
  2. Create the Sauce: In a bowl, mix the pineapple chunks with their juice, soy sauce, brown sugar, chicken broth, garlic, and ginger. Pour over the chicken.
  3. Add Vegetables: Place the sliced bell pepper and onion on top of the chicken.
  4. Cook: Cover and set the crockpot to cook on low for 5-6 hours or on high for 2-3 hours, until the chicken is tender and fully cooked.
  5. Thicken the Sauce: Mix cornstarch with water to form a slurry. Stir it into the crockpot. Increase the heat to high and let the sauce thicken for about 20-30 minutes.
  6. Serve: Dish the chicken over cooked rice, generously garnished with fresh cilantro.
