- 2 pounds chicken breasts, boneless and skinless
- 1 (20 oz) can pineapple chunks, with juice
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1/2 cup chicken broth
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 red bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons cornstarch
- 2 tablespoons water
- Fresh cilantro, chopped for garnish
Instructions
- Prepare the Chicken: Place the chicken breasts at the bottom of the crockpot.
- Create the Sauce: In a bowl, mix the pineapple chunks with their juice, soy sauce, brown sugar, chicken broth, garlic, and ginger. Pour over the chicken.
- Add Vegetables: Place the sliced bell pepper and onion on top of the chicken.
- Cook: Cover and set the crockpot to cook on low for 5-6 hours or on high for 2-3 hours, until the chicken is tender and fully cooked.
- Thicken the Sauce: Mix cornstarch with water to form a slurry. Stir it into the crockpot. Increase the heat to high and let the sauce thicken for about 20-30 minutes.
- Serve: Dish the chicken over cooked rice, generously garnished with fresh cilantro.
