- 1 1/2 cups peanut butter
- 1 cup butter, softened
- 1/2 teaspoon vanilla extract
- 4 cups powdered sugar
- 2 cups semi-sweet chocolate chips
- 2 tablespoons shortening
Instructions
- Mix Peanut Butter Mixture: In a large bowl, mix together the peanut butter, butter, vanilla extract, and powdered sugar until the mixture is smooth and firm.
- Shape and Chill: Roll the mixture into 1-inch balls and place them on a baking sheet lined with wax paper. Chill in the refrigerator for at least 1 hour to set.
- Melt Chocolate: In a double boiler or microwave, melt the chocolate chips and shortening together, stirring until smooth.
- Dip in Chocolate: Using a toothpick or fork, dip each peanut butter ball into the melted chocolate, ensuring it is fully coated. Return each ball to the wax paper.
- Chill Again: Refrigerate the coated peanut butter balls for about 30 minutes, or until the chocolate is completely set.
- Serve and Store: Enjoy immediately or store in an airtight container in the refrigerator for up to a week.
