For the Cobbler Base:
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ¾ cup granulated sugar
- 2 tablespoons cocoa powder
- ½ cup milk
- ⅓ cup unsalted butter, melted
- 1 teaspoon vanilla extract
For the Topping:
- 1 cup brown sugar, packed
- ¼ cup cocoa powder
- 1 ½ cups hot water
Instructions
- Preheat and Prepare: Heat your oven to 350°F (175°C). Grease an 8×8 inch baking dish.
- Mix the Base Ingredients: In a medium bowl, combine flour, baking powder, salt, sugar, and 2 tablespoons cocoa. Add milk, melted butter, and vanilla, mixing just until combined.
- Assemble the Base: Spread the batter evenly in the prepared dish.
- Prepare the Topping: In a small bowl, mix brown sugar and ¼ cup cocoa. Sprinkle this evenly over the batter.
- Add Water: Gently pour the hot water over the entire dish without stirring.
- Bake: Place in the oven and bake for 35-40 minutes, until the top is crackly and the center is set.
- Cool and Serve: Let cool for about 10 minutes. Serve warm, ideally with vanilla ice cream.
