  • Cake:

    • 2 cups all-purpose flour
    • 2 cups sugar
    • 3/4 cup unsweetened cocoa powder
    • 2 teaspoons baking powder
    • 1.5 teaspoons baking soda
    • 1 teaspoon salt
    • 1 teaspoon espresso powder (optional)
    • 1 cup milk
    • 1/2 cup vegetable oil
    • 2 eggs
    • 2 teaspoons vanilla extract
    • 1 cup boiling water
  • Frosting:

    • 1 cup butter, softened
    • 3/4 cup cocoa powder
    • 4 cups powdered sugar
    • 1/2 cup milk
    • 2 teaspoons vanilla extract

Instructions

 

  1. Preheat and Prepare Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix Dry Ingredients: In a large bowl, combine the flour, sugar, cocoa, baking powder, baking soda, salt, and espresso powder.
  3. Combine Wet Ingredients: Add milk, vegetable oil, eggs, and vanilla to the dry mixture and mix until well combined. Gradually add boiling water, stirring until the batter is smooth.
  4. Bake: Pour the batter evenly into the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  5. Cool: Allow cakes to cool in pans for 10 minutes, then turn out onto a wire rack to cool completely.
  6. Make Frosting: Beat together butter, cocoa, powdered sugar, milk, and vanilla until light and fluffy.
  7. Assemble and Frost: Frost the cooled cakes, layering them together.
