Cake:
- 2 cups all-purpose flour
- 2 cups sugar
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1.5 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon espresso powder (optional)
- 1 cup milk
- 1/2 cup vegetable oil
- 2 eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water

Frosting:
- 1 cup butter, softened
- 3/4 cup cocoa powder
- 4 cups powdered sugar
- 1/2 cup milk
- 2 teaspoons vanilla extract
Instructions
- Preheat and Prepare Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Mix Dry Ingredients: In a large bowl, combine the flour, sugar, cocoa, baking powder, baking soda, salt, and espresso powder.
- Combine Wet Ingredients: Add milk, vegetable oil, eggs, and vanilla to the dry mixture and mix until well combined. Gradually add boiling water, stirring until the batter is smooth.
- Bake: Pour the batter evenly into the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Allow cakes to cool in pans for 10 minutes, then turn out onto a wire rack to cool completely.
- Make Frosting: Beat together butter, cocoa, powdered sugar, milk, and vanilla until light and fluffy.
- Assemble and Frost: Frost the cooled cakes, layering them together.
