Campfire Potatoes

Ingredients:

  • 5 medium potatoes, peeled and thinly sliced
  • 1 medium onion, sliced
  • 6 tablespoons butter or margarine
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons minced fresh parsley
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste
  • 1/3 cup chicken broth

Instructions:

  1. Prepare a large piece of heavy-duty foil (about 20″x20″). Place the sliced potatoes and onion in the center of the foil.
  2. Dot the potatoes and onions with butter.
  3. In a small bowl, mix together the shredded cheddar cheese, minced parsley, Worcestershire sauce, salt, and pepper. Sprinkle this mixture evenly over the potatoes.
  4. Carefully fold the foil up around the potatoes and pour the chicken broth into the packet. Seal the foil tightly to create a pouch.
  5. Grill the foil packet over medium heat, covered, for 35-40 minutes, or until the potatoes are tender. You can also bake these at 375°F (190°C) for a similar time.

These campfire potatoes are best served hot, directly from the foil. Perfectly seasoned and cheesy, they’re sure to become a favorite addition to any meal.
