With the New Year just around the corner, I wanted to share a recipe that combines the excitement of the holidays with the ease of a quick, delicious meal. This Buffalo Chicken Stuffed Bread, a favorite request from my husband, is just as fun to prepare as it is to eat. It’s perfect for your New Year’s feast or any upcoming get-together!
- Preparation Time: 35 minutes
- Cook Time: 25 minutes
- Servings: 6
Ingredients:
- 2 boneless chicken breasts
- 1 tsp. olive oil
- 1 pizza dough (store-bought, rested for about 20 minutes)
- 8 oz. shredded mozzarella cheese (part-skim)
- 3 oz. shredded cheddar cheese
- 1/2 cup of Frank’s Wing Sauce
- 1/3 cup of ranch or blue cheese dressing
Directions:
- Prepare the Chicken:
- Cube the chicken breasts and season with salt and pepper.
- Heat olive oil in a skillet over medium heat. Add the chicken and cook until completely done.
- Add 1/4 cup of wing sauce to the chicken, stir to coat, and let simmer for a couple of minutes. Remove from heat and allow to cool slightly.
- Assemble the Bread:
- Preheat your oven to 425°F.
- On a well-floured surface, roll out the pizza dough into a long rectangle.
- Spread ranch or blue cheese dressing (based on preference) and the remaining 1/4 cup of wing sauce over the dough.
- Evenly distribute the chicken across the dough, then sprinkle with mozzarella and cheddar cheeses. Drizzle a little more wing sauce on top for extra spice if desired.
- Roll the dough tightly like a pinwheel, ensuring the ends are tucked in to prevent leakage during baking.
- Bake:
- Spray a baking sheet with non-stick cooking spray and place the bread seam side down.
- Bake in the preheated oven for 20-25 minutes or until the outside is golden and crispy.
- Let the bread sit for five minutes before slicing.
Note: Oven temperatures can vary. For best results, place the baking sheet in the middle of the oven. If the bread browns too quickly, consider lowering the temperature to 400°F and extending the baking time slightly.
