  • 1 9-inch pie crust, baked and cooled
  • 3 cups half-and-half
  • 3 eggs, beaten
  • 3/4 cup sugar
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup shredded coconut
  • 1 teaspoon vanilla extract
  • Whipped cream, for topping
  • Additional shredded coconut, toasted, for garnish

Instructions

 

  1. Prepare the Filling: In a medium saucepan, mix the half-and-half, eggs, sugar, flour, and salt. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Keep cooking and stirring for an additional 2 minutes.
  2. Add Flavor: Remove from heat and stir in the shredded coconut and vanilla extract.
  3. Fill the Pie: Pour the hot filling into the prepared pie crust. Place plastic wrap directly on the surface of the filling to prevent a skin from forming.
  4. Chill: Refrigerate the pie until it is fully set, about 4 hours.
  5. Garnish and Serve: Before serving, top the pie with whipped cream and sprinkle with toasted coconut.
