Beef Lo Mein

Ingredients:

  • 1 lb flank steak, thinly sliced against the grain
  • 1 lb lo mein noodles or spaghetti
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, julienned
  • 1 carrot, julienned
  • 1/2 cup snow peas
  • 3 green onions, chopped
  • 2 cloves garlic, minced

For the sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 teaspoon cornstarch
  • 1/2 cup beef broth

Directions:

  1. Begin by cooking the noodles according to the package instructions; once done, drain and set them aside.
  2. Prepare the sauce by whisking together the soy sauce, oyster sauce, sesame oil, sugar, cornstarch, and beef broth in a small bowl. Set this aside as well.
  3. Heat vegetable oil in a large skillet or wok over high heat. Once the oil is hot, add the thinly sliced beef and cook until it is nicely browned and just cooked through, about 2-3 minutes. Remove the beef from the skillet and set it aside on a plate.
  4. Using the same skillet, add the red bell pepper, carrot, and snow peas. Stir-fry these vegetables for about 2 minutes until they are just tender yet still crisp.
  5. Add the minced garlic and chopped green onions to the skillet. Continue to stir-fry for another minute until the garlic is fragrant.
  6. Return the cooked beef to the skillet along with the cooked noodles. Pour the prepared sauce over everything, making sure to distribute it evenly.
  7. Toss all the ingredients together in the skillet and allow them to cook for an additional 2 minutes. The sauce should thicken slightly and coat the noodles and beef evenly.
  8. Once everything is heated through and the sauce has thickened, remove the skillet from heat.
