- 1 (15.5 oz) can red or black beans, drained and rinsed
- 1 (10 oz) can red enchilada sauce
- 1 cup salsa
- 2 tablespoons taco seasoning
- 1/2 teaspoon chili powder
- 1/2 cup whipping cream
- 1 1/2 – 2 cups chicken broth
- 8 oz pasta (bowtie, egg noodles, or elbow pasta)
- 4 oz shredded Colby jack cheese
- 1 green onion, sliced
Instructions:
- Brown the beef:
In a 10″ skillet with sides and a lid, brown the ground beef over medium heat. Once fully cooked, drain the excess fat. - Sauté the onion and garlic:
Add the chopped onion to the skillet with the browned beef and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for 1 minute until fragrant. - Add the liquids and seasonings:
Stir in the taco seasoning, chili powder, salsa, enchilada sauce, whipping cream, and 1 cup of chicken broth. Mix well to combine. - Add pasta and beans:
