  • 1 large egg
  • 1/2 cup milk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting

Instructions

 

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin pan with non-stick cooking spray.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
  3. Combine Wet Ingredients: In another bowl, whisk together the pumpkin puree, egg, milk, melted butter, and vanilla extract until smooth.
  4. Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Avoid overmixing.
  5. Fill the Muffin Pan: Spoon the batter into the prepared mini muffin pan, filling each well about three-quarters full.
  6. Bake the Bites: Bake for 12-15 minutes or until the edges are lightly golden and a toothpick inserted into the center comes out clean.
