- 4 large Anaheim or Pasilla chilies
- 2 cups cheese (blend of cheddar, Monterey Jack, and cotija cheeses)
Ingredients for Chili Relleno Sauce:
- 1/2 cup crushed tomatoes
- 1 can diced green chilies
- 1/4 cup chicken broth
- 1 tablespoon oregano
- 2 cloves garlic, crushed and minced
- 1/2 teaspoon garlic powder
- 1/2 cup onions, diced
Directions:
- Prepare the Chilies: Roast the chilies using a grill or broiler method until the skins blister. Allow them to cool slightly, then gently peel off the skins. Make a slit down the middle of each chili and carefully open them for stuffing.
