Apple Pie Cookies

  • 1 package refrigerated pie crusts (2 crusts)
  • 1 cup finely chopped peeled apples
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon milk
  • Coarse sugar for sprinkling

Instructions

  1. Prepare for Baking: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cut Pie Crusts: Unroll the pie crusts on a flat surface. Use a cookie cutter to cut out circles.
  3. Mix the Filling: In a bowl, combine the chopped apples, granulated sugar, cinnamon, and nutmeg.
  4. Assemble the Cookies: Place a small spoonful of the apple mixture in the center of half of the pie crust circles. Cover each with another pie crust circle, and press the edges together with a fork to seal.
  5. Apply Egg Wash: Mix the beaten egg with milk. Brush this mixture over the top of each cookie and sprinkle with coarse sugar.
  6. Bake: Place the cookies on the prepared baking sheet. Bake for 15-20 minutes, or until golden brown.
  7. Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
